VARIETAL COMPOSITION: Assyrtiko 100%
VINEYARD: Organically grown Assyrtiko from the vineyards of Ktima Matsa and partner vineyards in Central Greece. The climate is warm and Mediterranean, and the vines range from 5 to 25 years old.
VINIFICATION: Selective hand harvesting and sorting in the vineyard. The grapes are chilled to 10°C before being transferred to the press, where strict sorting follows. Fermentation takes place in stainless steel tanks at 16°C. The wine then remains on fine lees with gentle stirring for a minimum of 4 months.
TASTING NOTES: Bright lemon-green color. The nose offers aromas of white flowers, bergamot, white-fleshed pear, and subtle mineral hints. Full-bodied on the palate with a pronounced earthy character and balanced, crisp acidity. Long finish.
Serving temperature: 9–10°C
Pairs ideally with grilled seafood and fish, white and light red meats with aromatic herbs and spices, roasted vegetable dishes, and cheese and charcuterie platters. Also an ideal choice as an aperitif, accompanied by roasted and salted nuts.
