VARIETAL COMPOSITION: Savvatiano 100%

VINEYARD: Savvatiano from the organic vineyards of Ktima Matsa in Kantza, Attica. The climate is dry and Mediterranean, and the vines are over 35 years old.

VINIFICATION: Selective hand harvesting and strict sorting in the vineyard. The grapes are transferred to the destemmer and subsequently to the press, where only the free-run juice is kept. Static clarification at 12°C, followed by alcoholic fermentation in stainless steel tanks at 16°C. The wine is aged on fine lees for 6 months with gentle stirring (batonnage).

TASTING NOTES: Light lemon color. The nose has a subtle aromatic character of white flowers, white-fleshed peach, and mint with a dominant background of pear. Full-bodied with refreshing acidity, the aromatic characteristics follow those of the nose. Long aromatic finish.

Serving temperature: 9–10°C

Pairs with fish, seafood, shellfish, oil-based dishes of Mediterranean cuisine, and selected cheeses.
