Wine Maker Comments

Visual: Brilliant, crystal-clear, pale yellow color

Aroma: Discrete and fresh aromas dominated by fruity characters such as apple, lime, and pear in combination with notes of mint and violet.

Taste: Refreshing, salty medium bodied with a pleasant acidity, perfect balance, and long lingering aftertaste.

Pairing:  A perfect companion for traditional Greek dishes, seafood, and shellfish, as well as selected cheese platters.

Serving Temperature: 10-12°C

Winemaking process

Selection of Savatiano grapes from 31-year-old vines from the Matsa Estate in Attica. Evaluation of analytical and berry sensory data to assess the right time to harvest. Specific harvest plan for each plot. Careful hand picking in the vineyard on the coolest times of the day. Cooling of incoming grapes at 10 0C followed by hand sorting in the winery. White wine vinification scheme with limited skin contact. Temperature controlled alcoholic fermentation at 14-18 0C. Maturation on the fine lees for 6 months, gentle filtering and bottling.
